Just One of Those Days

…that a girl goes through… (Monica throwback?)

Yesterday was a pretty dreary Saturday.  It was also one of those days where nothing seems to go right.  I woke up and my throat felt weird like I may be getting sick, so I hurried downstairs to load up on a nutrient rich green smoothie. (Remember the mystery kale from the farmer’s market last weekend?  When we went back yesterday, I found out it was called Camden Kale).  Here is the morning’s smoothie:

– 7 leaves Camden Kale
– 1 spear pineapple
– 1/2 peach
– 2 Tbsp chia seeds
– ice & water

I had a lot of cooking to accomplish, so we didn’t laze around like a typical Saturday morning.  We stopped at the farmer’s market and unfortunately there were a couple things we normally get there that they didn’t have.  Peach season seems to be drawing to a close so we elected to wait and get them at the store.  They also didn’t have any curly kale (sacrilege!), so our load was pretty light when we left:

– spaghetti squash (have another recipe in mind)
– 3 bell peppers
– garlic
– grass fed ground beef
– 4 honeycrisp apples
After the farmer’s market we headed over to Wegmans for the rest of the groceries:
– pineapple
– 3 peaches
– 2 avocados
– bananas
– PURPLE kale
– parsley
– cayenne pepper
– chili powder
I have been stocking up the past few weeks on bulk purchases (chia seeds anyone?), so I really only needed to grab some produce and spices because we all know I like things SPICY.  
I have my hair and makeup trial today so yesterday I also had to go and get a spray tan since I will be getting one before the wedding.  I used to go tanning all the time, but as I get older I try to be smarter about the way I treat my skin.  As much as I like to be tan, I like not having skin cancer more.  
This was the first problem of the day.  I did not push the tanning cartridge all the way into the machine, so I had to go through the whole process with it spraying nothing but air on me.  I then threw my clothes back on and went to the front with my disposable shower cap on to explain what happened.  She just walked back and pushed it down.  Whoops.  
I then had to wait through a cleaning cycle and for it to warm up again before I was successful in my mission.  Thankfully Neil stopped at Robeks next door while he was patiently waiting for me and surprised me with a wheatgrass shot.  MMM health!  So what should have been maybe 15 minutes ended up being like 30.
I had a lot of things to cook yesterday but they were mainly for other people.  I had to make food for a party we went to last night at a friend’s house and this afternoon there is a potluck I am going to in MD.  We also needed lunch so I made tacos:
I didn’t get a chance to take a picture of the final product because we ate them too fast.  There are plenty of leftovers though for the week.
Meet my nemesis:
I decided to throw in one of the habanero peppers that we got from the farmer’s market last week.  I do not always like to follow suggestions.  Sometimes I need to learn on my own.  This is problem number 2 of the day.  It is advised that you wear gloves when cutting a habanero pepper.  It is also advised that you wear gloves when cutting jalapeno peppers, but I have never had any problems not wearing gloves so I figured I did not have to with this habanero.
I was mistaken.  I cut it open, removed all the seeds with my hands (which contained minuscule cuts), and proceeded to make the tacos.  I was very careful not to rub my eyes or anything until I had washed my hands, but apparently it was already too late for my hand.  Over the course of the day my hand started burning like when you are out in the cold and come inside and it starts to warm up.  A little while after that it started to feel like it was on fire.
The only thing that saved me was soaking it in a bowl of milk.  I’m glad that Neil can drink milk, otherwise we wouldn’t have had any in the house.  Note to everyone: wear gloves when cutting habanero peppers.
Next up were Healthy Cookie Bites.  I have made these a number of times and they are delicious!  I took these to the party last night and they were gone in no time!  They contain no flour, dairy, or eggs and can be made gluten free by using gluten free oats.  Well, there’s dairy and eggs in the dark chocolate chips I used, but those can be substituted as well.

The sweetness comes from the banana and is a great way for me to use up bananas that have gotten too ripe (no spots for me!).  Again, I forgot to take a picture of the finished product because I was running around like a mad woman trying to get all this food made.
Problem thing #3 of the day was that for the second round of cookies, instead of turning off the timer I turned off the oven.  When I went to take out the second batch I realized the oven was barely hot anymore so I had to turn it on and try to cook them again.  I seem to have succeeded since everyone ate them 🙂
Last but not least I made Pistachio Pesto Quinoa Salad from The Naked Kitchen.  I made a few alterations, but generally followed the same recipe.  Problem #4: I realized that I didn’t get any spinach which I needed for this recipe.  Good thing we live walking distance to a grocery store.  
Today was the maiden voyage of the 32 oz Vitamix container!!
Threw in some red quinoa!

Pesto is so delicious I could have eaten this whole thing.  The container was the perfect size for this and made getting to it a breeze.  Thanks mom!
I just realized in looking through my pictures that I didn’t take any of this final product either!  I need to be better about that in the future.
I had a second green smoothie since I wasn’t feeling 100% and I can say that today I feel back to my normal self.  
Smoothie Part Deux

– 3 leaves Camden kale
– 1 leaf PURPLE kale
– 1/2 banana
– 1/2 peach
– ice & water
I started drinking it before I realized I had to take a picture.  The rest of the day and night picked up because I got ready and we drove to MD and had a great time reuniting with friends.  
The setbacks stopped at forgetting the spinach, so the rest of the day turned around.  We all have days like that, but it is how we respond to them that makes or breaks our day.  I don’t know about anyone else, but I would rather try and find the positive in things and just take them as they come rather than let them ruin my whole day.
I am headed back to MD now to get my hair and makeup done and to spend the afternoon with some wonderful ladies.  Let’s hope I remember to take pictures this time!!
