Happy Wednesday! I disappeared yesterday because I was asked to do something last minute which always makes me nervous. I am not one for change or spontaneity, so my mind would not concentrate on the post I was trying to write. I am here to tell you that I survived and come bearing foods from Sunday! We went to my in-laws house on Sunday and made falafels for them. They turned out really well given the fact that we had never made them before. I was a bad blogger and instead of taking pictures of my snacks I ate them all instead, so you’ll have to forgive me for that. Here is what I do have:
Oh look, scrambled eggs and mushrooms again. Still so good. What DID change, however, is my morning smoothie. I am planning on sharing the recipe this week, but for now you can observe the glory of chocolate, blueberry, and basil. I can’t find any way to take a picture of the finished product that makes it look good, so there’s also a before picture. Maybe that will help.
Before falafels there were snacks. Vega Sport protein bar (I am doing another campaign and finally got to try the chocolate peanut butter…review coming soon!), carrot sticks, cranberries and walnuts, grapefruit. There are always many snacks at their house and I can’t stop munching.
We bought all fresh produce for the falafels and the garnishes and made sure to get spinach and arugula instead of lettuce for more nutritional benefits. I made sure to coat mine in hot peppers of course.
I can’t say that my stomach enjoyed all of the flour, but my mouth did. Delicious!
