Happy Friday from North Carolina! Neil and I arrived around midnight last night and have been spending the day with family eating and having a great time. My plan is to fit in a run and a barre class sometime before we leave on Monday since I will have to do something to combat all this delicious food.
I’m sure you are all familiar with the routine, so here are my five favorite things this week:
1. Maple donuts
I hardly ever eat donuts, but when I see a maple frosted one from Dunkin Donuts, I must have it. I ended up having two this week because it was my last week at work and people bought them especially for me. I can’t say no to this delicious creation.
2. Frozen Herb Starters
My friend Carly gave this to me as a parting gift when I left work yesterday and I thought it was a great idea. You can freeze fresh herbs in any liquid or oil (water, broth, olive oil, butter) and then when you are ready to cook, just toss the frozen cube in the pan. It is also a good idea for drinks if you want to freeze some mint in ice cubes!
3. Top 100 Books List
I have been on a reading spree lately and with more free time on my hands coming up, I feel like tackling something more substantial. I want to work my way through a 100 books to read in a lifetime list, but so far the ones I have found have had some questionable pieces (Hunger Games?). I think I am going to compile my own list from the multiple ones I have found. If anyone knows a good list, please let me know! I’ve already ruled out the Amazon list, but the Goodreads and BBC lists seems promising.
4. Early Retirement
My last day of work was yesterday, which is both exciting and frightening. I want to take more time to devote to this blog, but also I am not sure that I want that to be my only source of income. I am still working on building Erin’s Inside Job, so in the interim I may focus more on selling my almond butters since I have built up a pretty good customer base. Now if only I could transplant them to Chicago…
5. Road Trips
While many people groan at the prospect of driving for multiple hours, I have always been excited by long road trips. If I had the time, I would almost always prefer to drive than fly. Our trip to NC was great, but I wish it had been during the daylight. There’s just something about driving that I love.
