WIAW: 3 Meal Edition

Hello! Welcome to this week’s edition of What I Ate Wednesday, which upon looking back is not going to be very substantive.  Typically I eat like a bird, meaning that I constantly eat small meals and snacks throughout the day and there are lots of pictures.  I haven’t followed the “three square meals” concept for some time, but yesterday I did just that.

Breakfast

I have been making a regular smoothie, but I haven’t been making eggs and mushrooms as much (gasp).  I still don’t like not having everything from my kitchen, so every time I have made eggs they aren’t as delicious as I remember.  I should probably start making more, though, considering that I have 36 in the fridge.

I went to the gym yesterday morning and had a smoothie of protein powder, chia seeds, greens, and blueberries upon my return.

Lunch

My smoothie lasted me until about noon and then I was hungry.  We have a Chipotle right downstairs, so I got my regular bowl of brown rice, black beans, chicken, pico, hot salsa, corn and guacamole.  I used to be able to inhale a whole bowl, but lately I have been getting full about 3/4 through and making Neil eat the rest.

Dinner

Chipotle fills me up for a long time, so I didn’t end up having any snacks between lunch and dinner.  We weren’t too excited about any food choices around us last night, so we walked awhile to a place called Blaze that is basically a Chipotle of wood fired pizzas.

There is a menu of specialty pizzas you can choose from, or you can create your own pizza with unlimited toppings for a flat rate.  The most you spend on a pizza is $7.95, which is really cheap considering where we are eating out.  I got a pizza with marinara, pesto, cheese, spinach, and mushrooms.  It came out really well and I could eat here all the time.  I definitely recommend this place if you have one near you.

I did have two pieces of mini almond biscotti from Trader Joe’s when I got home, but didn’t take a picture.

Update on India: We decided not to go and although I was looking forward to it, I think it’s the  best decision amidst all this life change.  You’ll just have to wait and read about it when we do end up going 🙂

    I’ve always found it to be extremely difficult to eat my way through a chicken, rice & bean chiptole bowl. What a bummer about India. But If you feel it’s the best move, then good for you on on making this decision.

      I know its so much food! Yeah, India will still be there when we are in a better position to enjoy it 🙂

    That pizza looks so good. I haven’t found a good flat pizza near by (but deep dish, I’m all about that.)

    I definitely need to make more smoothies even though it’s getting cold. It’s such a genius breakfast option.
