Five Things Friday #70 + A Giveaway!

Hey friends! Happy Friday!

This weekend I am FINALLY going to have my fitness photo shoot for work which means that immediately after I will be headed to somewhere in the city that serves something AMAZING to eat. I’ve been living off of chicken breasts, smoothies, and LOTS of fruits and vegetables for the past couple weeks (minus that cupcake from last weekend), and I’m ready to get some bread and cheese back into my life.

You know I am one for moderation and balance, so super strict clean eating is not in my life plan. Will I do it to get in top shape for something like a photo shoot? Yes. But for me it is not sustainable. I exercise, I eat relatively well (that chicken is pretty delicious), and I love desserts. I’m not eliminating them from my life. YOU CAN’T TAKE THEM FROM ME.

1. Pumpkin Spice Almond Butter

As you know, I make my own almond butter at home. I don’t like the addition of extra oil and I certainly don’t like the price of buying it in the store. I also go through it like a crazy person, so in order to save my wallet I make it at home about once a week.

I saw Ashley’s Instagram post about making spicy Mexican brownies and it gave me an idea to mix up my normal almond butter recipe. I always make a pumpkin spice flavor because I never want Fall to end, but this time I added in a little red chili powder to spice things up. I was worried about the flavors clashing, but it actually turned out really well.

The recipe is super simple and takes 3 cups of roasted almonds, 1.5 Tbsp maple syrup, 1 tsp salt, 1 tsp pumpkin pie spice, and 1/4 tsp chili powder.

2. Poshmark

I’ve known about Poshmark for awhile now, but I never spent much time on it. Now that I’m obsessed with buying more Lululemon clothes, I’ve been on it all the time. If you’re unfamiliar, it is an online selling platform that allows you to sell new or used clothes, makeup, accessories, etc. What I love is the interaction between people. You can often save even more money by bundling more than one item from someone’s closet.

I’ve made it my weekend project to clean out my closet and get some things up there to sell, but for right now it’s just been an amazing thing for me to waste my time on.

3. Sweet Potato Smoothie Bowl

I got tired of making smoothie bowls with lots of fruit, so I decided to try making one with the millions of sweet potatoes I have in the kitchen. It was amazingly delicious:

  • 1 cooked sweet potato
  • 1 cup almond milk
  • 1 Tbsp maple syrup
  • garnishes for the top (I used banana, almond butter, and Purely Elizabeth granola)

4. Single and Sober

I recently started writing for a Chicago-based sober dating website called Single and Sober. It’s apparently growing in popularity and I like being able to contribute ideas about things to do in the city that don’t revolve around alcohol. I’m slated to write 4 more posts throughout the year, so I’ll be sure to share them on my Press & Publications page as they go up!

5. Spaghetti Squash Hack

I talk all the time about how I am a very lazy cook. On rare occasions, I will get the motivation to make a complicated meal, but most of the time I want it done in as little time and as few steps as possible. I stopped making spaghetti squash because I found it too time consuming to cut it open, scrape out the seeds, and put it on a baking sheet. Seriously—lazy.

Then I discovered that I could bypass all of this by simply microwaving it for 10 minutes. I cut a small slit (maybe 2-3 inches) across, then put it in the microwave. After 10 min, it easily sliced open and I was able to remove the seeds and then scrape the remaining squash out. Seriously. Game changer. I just bought two more yesterday on the way home.

    I really love sea salt and either nutritional yeast or Parmesan cheese on spaghetti squash. I love the flavor of the squash so I just want to dress it up a bit. Thanks for the hack! I am really bad at cutting squash open. They are really tough.
    After your photo shoot I’d go for cheesy bread. Nothing beats carbs plus cheese. Nom!

      I know that is my least favorite part. I usually have to use a hammer w the knife BC it’s not that sharp. The microwave saved my life!

    This post is amazing because it pretty much sums up my week. I’ve been obsessed with pumpkin and almond butter (aka what you made) and spaghetti squash and poshmark. Too funny. I think I’ll be hitting up poshmark a lot this weekend with this blizzard keeping us inside.

      Haha that’s nuts! Last night I just cooked up a sweet potato, added some cinnamon, and stirred in a bunch of almond butter. It was AWESOME.

    I NEED a reading lamp like that! I like how you can adjust the brightness–that’s a key feature for me when it comes to a lamp.

    I like to keep the lights low when I’m in bed so the lower lighting settings on the lamp is my fave feature. It looks very sleek too!

    I like that it is so simple looking. The height should help spread the light to where it’s needed really well. I would love to have this to put on my nightstand.

    I love that it’s light and small because I tote lamps from room to room like a weirdo. We don’t have overhead lights in my apartment so we are very lamp dependent!

    I love the sleek design of the lamp as well as how little room it takes up as well a the adjustable arm. This would be perfect for my bedroom or the office i intend on having real soon.
