Thanksgiving Weekend

I don’t know about you, but the last few days have been GLORIOUS. I only had about 3 hours of work over a 4-day period. Heaven.

For everyone in the U.S. I hope you had a great Thanksgiving and a relaxing time off. This weekend was another lazy one and it might stay that way until the new year because we don’t have any trips planned until then.

Before I get into the weekend, let’s just talk about this latte that I’ve been drinking every day.

Eggnog Latte

As you may have seen on my IG stories, I bought and tried the Califia Farms almond milk eggnog this weekend. I LOVE eggnog, but it always makes me sick to my stomach, so when I heard other people rave about this brand, I wanted to give it a try.

They definitely have the eggnog smell down and the taste is pretty spot on, but it’s obviously thinner than regular eggnog. Let’s just say it’s good for a non-dairy eggnog. What doesn’t hurt my stomach is butter, so along with my recent butter coffee obsession I decided to make a latte with this eggnog, grass-fed butter, and espresso (obviously). It is AMAZING. The butter helps create the creaminess of regular eggnog and I’m so obsessed with it.

Obviously, it’s no longer dairy-free, but you should definitely try it if you can.

I also wore my hair down for 3 out of the 4 days, but somehow this is the only manic picture I have of it.

Saturday I taught two morning classes, worked out afterwards, then inhaled this epic turkey BLT at Goddess and Grocer.

I did a little shopping for Christmas, but didn’t make it that long because there were still way too many people out in the world. I headed home since Neil and I were expecting a couple friends to come over with HOMEMADE Indian food. So good.

I also made more chocolate chip cookies since I ate them all at Thanksgiving. Whoops.

Sunday we slept in, hung around the house, then headed to Shake Shack for lunch. I haven’t been in ages and it was a pretty delicious stop.

I spent some time working on a recipe to share later this week and you’ll want to check it out because it’s super easy, yet it looks much more complicated than it really is.

I took 215667 naps, made some squash, and prepared for the week. I hope you guys had a great weekend!

Sidenote: If any of you are in Chicago, this Thursday evening the Chicago Park District is holding an event at Columbia Sportswear on Michigan Ave. Attendees will enjoy free food, drink, live music and raffles while shopping for winter gear and 10% of sales from the night will be donated to Chicago Parks Foundation. You know I love my Chicago parks because that’s where I go to creepily stare at other people’s dogs and hope to pet one. 🙂

    I have to say that the turkey this Thanksgiving was on point, even if I didn’t make it myself, but omg the Brussels sprouts… I couldn’t stop eating them. I don’t know why. They were really simple, too. But I could. Not. stop.

    Sounds like the perfect weekend!!! We ate pasta three days in a row, worked out, slept in until 9.30 yesterday morning, drank wine and watched movies! Bliss!

    ah yes to all the turkey sandwiches. I took lots of naps this weekend too haha. Two naps on Thanksgiving day, but it felt so nice. Best thing I ate all weekend was a smoothie with dates, almond coconut milk, banana, and peanut butter!

    Sounds like such a great break! I had a short work week last week too and it was glorious!! Ive not tried that dairy free egg nog yet…i like the so delicious coconut nog for non dairy…you’re right though its not as thick!

      When I add the butter to the latte it thickens up haha. It’s good though!
