Five Things Friday #251

Happy Friday!

I hope you had a good week! I took things easy at the gym this week because my knee has been giving me problems and I'm trying to be smart about things. I am planning on going for an x-ray and likely an MRI to see what's going on because this issue has been nagging for probably about two months now. Wish me luck!

This week has been good getting back into the swing of things after the holidays. I'm working on figuring out some structure and working on content for this coming year that I think will really benefit you. If you have any ideas or requests, please let me know in the comments. Miles seems to have dropped down to two naps, so as long as that schedule remains consistent, I can work around it and don't feel quite as scattered. He's kind of trying to crawl which will be a whole new stage of parenthood when that kicks in, but I'm here for it. šŸ™‚

Here are some of the things I've been loving this week - enjoy!

1. Banza Chickpea Lasagna Noodles (and recipe)

I've never made lasagna in my life, but let me tell you -- Neil and I made it using these chickpea noodles and we ate the entire tray in two days. It doesn't hurt that we loaded it with full fat cheeses and ground turkey, but I couldn't tell the difference at all in these noodles and you are able to just put them in dry and they cook in the oven. Here is the lasagna recipe they sent with it which I highly recommend:

  • 1 box Banza lasagna
  • 3 cups (24 oz) marinara sauce
  • 16 oz ricotta cheese
  • 1/2 cup grated Parmesan
  • 1/4 cup chopped basil
  • 1.5 lb fresh mozzarella, sliced
  1. Pre-heat oven to 375 degrees. In a small bowl, combine ricotta, Parmesan, and chopped basil. Season with salt and pepper.
  2. Spread 1 cup of marinara sauce in a 9x13 inch baking dish.
  3. Lay 4 dry sheets over the sauce, allowing space in between each sheet as they will expand while cooking. Add a layer of ricotta, 1/2 cup sauce, and a layer of mozzarella. Repeat twice more, topping the last layer with any remaining Parmesan.
  4. Cover and bake for 45 min. If desired, remove the foil after 40 min, turn oven to broil, and allow the top cheese to brown for about 5 min. Keep a close eye on it to avoid burning.

2. SpoonfulOne

Ok yes this is a baby product, but I think it's so cool so I wanted to share. I'm planning a post (or more) about baby things around when he turns one, so that's where I'll put most of the toys and things we use a lot so you can reference.

SpoonfulOne helps to protect your child from developing a food allergy. This is done by providing regular exposure to all of the major eight allergens at once in the form of food mixins, puffs (what I got), and crackers for older kids. Your child should be exposed to each allergen individually first to make sure that there are no reactions, but if there aren't, you can start using this to regularly expose them all at once which I think it amazing. 

I bought these puffs on Amazon and because they're a little pricey just got the 14 pack to try out and will go from there.

3. Trash Mirror

One night when I went down to walk Donut, I saw a GIANT mirror on the loading dock to go out with the trash. Someone had recently moved out that day and apparently couldn't or didn't want to take it with them, so I ran back upstairs and asked Neil to come down and help me bring it upstairs.

Guys, this is the most amazing find ever and if you've ever tried to buy a big mirror, you know how expensive they can be. This thing is HUGE and it makes me so happy whenever I walk in the bedroom. It's my favorite Christmas gift to myself. HA.

4. Resizing my rings

I haven't been able to wear my rings in at least a year because they wouldn't fit on my finger. I had many people tell me to wait to have them resized because I needed to wait long enough to give my fingers a chance to shrink after the baby.

I was also advised to wait until after summer which causes fingers to be puffier anyway in the heat, so I waited almost 9 months and now in the cold they still wouldn't fit. I finally took them in to get resized and I'm so glad that I did. I felt naked without them, although I did get used to not wearing them. My finger actually went up almost an entire size, so there was no way that thing was going back to the way it was. Now I've been wearing them around the house even when I don't have anywhere to go because I'm so glad to have them back. šŸ™‚

5. Wednesday's Post

This is kind of cheating, but I'm really proud of all the work that went into this post and I want to make sure as many people see it as possible. It's so important to get the RIGHT information out there about pregnancy and fitness so the confusion is cleared up and people can stop operating on outdated guidelines.

  1. Great recap of the week. Good luck with your knee. I have been getting treated for a slight tear on my miniscus with injections but now Iā€™m having surgery soon. My doctor is amazing!

  2. I don’t know if I have ever commented, but I’ve often thought to myself that we appear to share same tastes in this or that (actually, most often in books!). Well, I saw your rings in this post and they are absolutely 100% identical to mine, at least as far as the picture allows me to declare. Yours are very pretty šŸ˜‰
