Homemade Cashew Butter
Happy Thursday! I mentioned yesterday that I loaded my sister up with some homemade nut butters since I have gone crazy with my new food processor. I can say that I think the Vitamix is phenomenal with more liquid creations such as smoothies, but with drier or stickier things such as nut butters, hummus, pesto, etc, the food processor is easier to operate. I still haven’t discovered all its wonder yet, but believe that I will be sharing it with you along the way.
I wanted to share my recipe for homemade cashew butter because it is SUPER easy. I just put in cashews and pushed the ON button. Presto.
I bought cashews in bulk at Costco and the closest they had to raw were unsalted. You can also make this with raw cashews, but this is what I had on hand at home. It came out pretty deliciously and was reminiscent of peanut butter, just different. You can also add other flavorings like more salt or a sweetener such as maple syrup or honey, but these cashews were on the salty side anyway so I wanted to stick with that theme.
- 2 cups cashews (raw or otherwise)
- 1/4 tsp sea salt (if using unsalted cashews)
- Place cashews in food processor and press ON. You may have to stop it once or twice to scrape down the sides, but it should turn into cashew butter within a few minutes. BAM. DONE. DEVOUR.
Feel free to experiment with add ins or the quantity of nuts. It’s really all up to you. I didn’t add any liquid sweeteners or anything, but if you do I would add them after the cashews have reached a creamy consistency. Adding liquid may cause the butter to solidify again (think play-doh), but just leave the processor on and it will calm down into a delicious creamy mess. Enjoy!
